We produce a range of limited bottlings of single-vineyard wines from grapes we farm ourselves. Some labels are unique to specific vintages while others are produced over consecutive years.
In line with the concept of field blends, each vineyard is harvested as a whole, without sorting the fruit by variety or color. Some berries come in ripe and fleshy, while others are more acidic, green, and tart. The combination of aromatic profiles and ripeness from each plant contributes to the personality of each wine. We're more focused on the expression of each site as a whole and don't aim to isolate individual grape varieties for their distinct flavors.
We make wine in a small cellar just a few minutes from the ocean, combining stainless steel tanks, oak barrels of different sizes, and glass damigiane. Native ferments only, no additions nor modifications of any kind. SO2 levels at bottling may vary for different cuvées.
Some of our labels are available early in the season, during the summer months. They are exuberant and vibrant at release, with fruit and freshness as the dominant tones in the glass. After a couple of years in bottle, they begin to express their true personality, following an aging curve that is more of a wave than a straight line.
In the spring, we release wines that have undergone longer aging, sometimes kept in bottle for several months before becoming available. These wines come from the oldest, most expressive parcels, where yields are naturally smaller. They are enjoyable at release but reveal their full potential after resting in bottle for several months, ideally three to five years after release. To truly appreciate what they represent, they are best enjoyed over a long meal, paired with ingredients that resonate with their origin and character.
